IN OUR KITCHEN | Pumpkin Dump Cake
RECIPE: Pumpkin Dump Cake
FROM: cookiesandcups.com (find the recipe here)
NEW (to us) INGREDIENTS: None
FIRST TIME MAKING? Yes
OUR THOUGHTS: I brought this dessert to a carry-in at work. I loved how easy it was to put together - perfect for a busy weeknight. The taste was delicious as well - I especially loved the difference in texture between the pumpkin part and the cake/butter part. The only bad thing is that this dish will definitely not keep you on track with a diet! I had to get it out of the house fast!

IN OUR KITCHEN | Lasagna Rolls
RECIPE: Lasagna Rolls
FROM: We used two recipes. We used the sauce from here and the ricotta mixture from here.
NEW (to us) INGREDIENTS: None
FIRST TIME MAKING? Yes
OUR THOUGHTS: Definitely more work than regular lasagna. However, since I am trying to watch what I'm eating I appreciated the pre-portioned servings. I couldn't "accidentally" give my self a bigger piece if you know what I mean :). They were delicious - I really think collaborating the two recipes was a good idea. Oh, and they were a lot more fun to photograph versus regular lasagna.

IN OUR KITCHEN | CHICKEN PESTO
RECIPE: Skinny Chicken Pesto Bake
FROM: Skinnytaste.com (find the recipe here)
NEW (to us) INGREDIENTS: None
FIRST TIME MAKING? Yes
OUR THOUGHTS: This dish was delicious and so easy. It calls for homemade basil pesto but we just used store bought pesto and it was fine. I love how all the flavors came together; the tomato on top was great!

IN OUR KITCHEN | Chai Spiced Sugar Cookies

Recipe: Chai Spiced Sugar Cookies
From: mybakingaddiction.com (find the recipe here)
New (to us) Ingredients: This was definitely the first time I put pepper in cookies!
First time making? Yes
Our Thoughts: We both loved these cookies. There was a little kick with the pepper, but just the right amount. I brought the batch to our Bible Study group and they were a hit there too! Delicious.

IN OUR KITCHEN | Santa Fe Turkey Stuffed Peppers by Skinnytaste
Recipe: Santa Fe Turkey Stuffed Peppers
From: Skinnytaste.com (find the recipe here)
New (to us) Ingredients: None
First time making? Yes
Our Thoughts: "I hate stuffed peppers" is what I always say; my Mom used to make them and I detested them. I only made this recipe because Jason likes stuffed peppers. However, to my surprise, I liked these! The filling was delicious and the pepper flavor did no permeate everything. I added a dollop of sour cream to mine to add a little moisture. This was a great tasting healthy meal.

In Our Kitchen / Chicken-Coconut Soup
Recipe: Chicken-Coconut Soup with Summer Squash and Edamame
From: Williams-Sonoma New Flavors for Soups
New (to us) Ingredients: Fish Sauce, Edamame, Lemongrass
First time making? Yes
Our Thoughts: As I was putting this soup together with Jason I thought there was NO way that it could taste good. However, all the flavors did come together nicely and tasted really good. A great light, flavorful soup for summer; creamy with just a hint of spiciness. Jason said (and I agree) that next time we make it we will probably add some rice (wild?) to our meal to help fill us up.
p.s. I don't have much light to work with in my kitchen so I did my best but I know the pictures are not great :)
